Nothing is better than pumpkin and chocolate to get into the Samhain spirit. This is a recipe that has been a favorite in my family for as long as I can remember. I am bringing this one straight out of my own recipe book. These are perfect for Samhain or even for office parties during the holiday season. Thicker than a cookie but too sweet and delicious to be just a bread....these fall somewhere in between. Pumpkin Chip Cookies 1 can or 2 cups pumpkin puree 2 tsp baking soda 4 tsp baking powder 1 tsp salt 2 tsp cinnamon 4 cups flour 2 cups sugar 2 beaten eggs 2 TBSP sweet condensed milk 1 cup vegetable oil 2 tsp vanilla 1 pkg chocolate chips- semi sweet Put all the ingredients into a LARGE bowl in this order. Mix very well. Place TBSP size spoonfuls onto a greased cookie sheet and bake 14 min. at 375 degrees. Quantity depends on the size you make these but this should easily make a couple dozen. I wouldn't double the batch just because mixing it together well would be very difficult. Even a single batch is much easier to mix thoroughly with a stand mixer.
